Bottone raviolis filled with roasted aubergine and lemon zest, tomato coulis and tomato water, cream of parmesan and basil gel
Mezzaluna Cacio Pepe Scampi e Agrumi (Lazio)
Mezzaluna pasta filled with pecorino and parmesan, duo of black peppers from Madagascar and Jamaica, bisque with citrus zest and pan-seared langoustines
Cappelletti di Picione (Toscana)
Cappelletti stuffed with pigeon confit, cream of black garlic and blackberry sauce
Quaglia alla Cacciatora (Toscana / Piemonte / Umbria / Marche)
Deboned quail stuffed with taggiasca black olives cooked at a low temperature, cacciatora sauce, millefeuille of potatoes and rosemary
Sbrisolona (Veneto / Lombardia)
Italian crumble of polenta and fresh figs, served homemade gelato of burrata and cognac
About Chef Francesco:
Chef Francesco grew up in the North of Italy in the Como region helping his Mother in the kitchen and assisting his Uncle with farm work. This childhood certainly brought up in the young Chef an appreciation for quality ingredients and heart warming food. He soon decided to pursue a career in the kitchen and studied hospitality for 5 years in Monza in the Milan region.
After graduation, Francesco Mauri worked in a variety of establishments, from old school traditional Osterias to Michelin star restaurants across Italy. He moved to Geneva for the opening of La Bottega, where he worked several years. During his time as Sous-Chef then as Chef at the restaurant, it earned its 1st Michelin star. In 2019 we had the immense pleasure to welcome him into the Eat Me family. And ever since, he has been playing around with ingredients and spices from the four corners of the world – creating exceptional dishes along the way.
This special event at Eat Me Geneva is a way for Chef Francesco Mauri to honor his roots and take our Eat Me guests on a true culinary journey full of surprises through Italy – you won’t want to miss out!
